Potato Salad

Potato SaladWhat you will need:

  • 2 lbs small yellow, white or red potatoes, cooked, cooled and cut into quarters
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tbsp mustard
  • 1 tbsp LGP brine
  • 1/2 cup LGP chopped pickles
  • 1/2 cup finely chopped red onion
  • 1/2 finely chopped celery
  • 2 hard boiled eggs, peeled and chopped
  • 4 slices of cooked bacon, crumbled
  • Salt & Pepper to taste


In a large bowl, add chopped potatoes and season with salt and pepper. In a medium bowl, combine sour cream, mayonnaise, mustard and brine. Add dressing, pickles, onion, celery, eggs and bacon to large bowl with potatoes. Gently stir to combine. Refrigerate at least 1 hour before serving.
